Four Tips for Baking Gluten Free Cakes
1. Use an electric mixer to make sure as much air gets into the mixture as possible. It may mean more washing up, but your cake will rise better for it.
2. Before baking, bring all refrigerated items (e.g. milk, eggs, butter) to room temperature. This is true for all cakes, but it's easy to forget!
3. Try adding a bit of fruit puree or apple sauce to your recipe - this will make the cake more moist and extend the shelf life. However, remove the cake from the cake tin and put on the cooling rack around 10 mins after removing from the oven because it may go soggy.
4. If your cakes keep coming out doughy and dense, try separating the eggs. Beat the eggs whites and fold in, don't mix too much.
